Kerala is a state in the southern part of India; its cuisine includes both vegetarian and non-vegetarian dishes. As with other South Indian areas, its main staple is rice. Geographically, it's basically a long strip along the southwest coast of India (see this map on Wikipedia), so it also has a good repertoire of fish and seafood dishes.
